3/4 cup Pioneer Buttermilk Baking Mix
3 eggs
1 cup sugar
2/3 cup canned pumpkin
1 cup chopped pecans (I leave these out)
2 tsp. cinnamon
1 tsp. pumpkin pie spice
1/2 tsp. nutmeg
Filling
1 cup powdered sugar
8 oz. cream cheese
6 T margarine, softened
1 tsp vanilla

Directions:

Preheat oven to 375. Grease 15x10x1 jelly roll pan. Line with wax paper and grease again. Beat eggs and sugar until fluffy. Beat in pumpkin, add dry ingredients. Pour into pan and sprinkle with pecans. Bake 13 to 15 min. Remove from oven and cool 1 to 2 min. Turn onto cotton cloth sprinkled with powdered sugar ( remove wax paper). Roll into cloth and cool completely. Beat all ingredients for filling together(is better to mix and refrigerate a while before using) After roll has cooled, unrol cake and spread with filling. Re-roll and refrigerate, or freeze.
