2 cans Black-eyed Peas (drained)
8 slices crisply fried bacon
1/2 tsp. onion powder
1 tsp. celery salt
2/3 cup raw rice
2 cans Rotel tomatoes w/liquid (I use 1 hot and 1 mild)
Salt and Pepper to taste

Combine peas, bacon and seasonings with tomatoes and rice. When mixture is combined, place in 1-1/2 qt. baking dish in 350 for 30 min. covered. (If mixture looks too dry, add a little water)
