Dressing:1 c. sugar
2 T. flour
1/2 t. salt
1 3/4 c. pineapple juice
2 beaten eggs
1 T. lemon juice
3 quarts water
1 16 oz. package of acini de pepe (pasta)
1 T. oil
2 t. salt
3 cans Mandarin oranges (drained)
2 medium size cans pineapple chunks (drained)
1 c. coconut
1 c. mini marshmallows
1 12oz. container of non dairy topping

Directions:
Directions:
Combine sugar, flour, 1/2 t. salt, gradually stir in pineapple juice and eggs. Cook over medium heat, stirring constantly, until thickened. Add lemon juice. Cool to room temperature. Cook and drain pasta. Add dressing to acini de pepe and cool overnight. Then add rest of ingredients. Will keep up to one week.
