1 lb. dry lentils
2 16 oz. cans diced tomatoes
2 bay leaves
1 T. salt
1/2 t. pepper
1 1/2 lb. polish sausage
8 slices bacon
1 C.carrots/sliced(I add more)
1 C. celery/chopped(tops and all)
1 onion(chopped)
2 T. lemon juice

Directions:
Directions:
Wash lentils in large dutch oven. Put lentils, 5 C. water, tomatoes, bay leaves, salt and pepper and bring to a boil. Cook for one hour. Reduce heat and add polish sausage(sliced in 1/2 inch sections). Cover and simmer 15 to 20 minutes. Meanwhile in large skillet over high heat, fry bacon slices, cut up. Spoon off all but 1 T. fat from skillet. Add Carrots, celery and onion to bacon and cook over medium heat 15 min.

Add mixture to lentils and cook 30 min. or more.
