one teaspoon each fennel seeds and cumin seeds (cracked)
one piece star anise, crushed ( I have a jar of these, if you want a half dozen just ask me, one jar will last a long time)
1/2 teaspoon coarse salt
1/2 teaspoon coriander seeds cracked
1/2 teaspoon whole black peppercorns, cracked

Directions:

toast these seeds in a dry skillet over med heat until aromatic 2-3 minutes, cool slightly and then crush it using a mortar and pestle until it is fine (like OC sand).
