1 lb boneless skinless chicken breasts
1 Pillsbury thin pizza crust
1 bunch diced green onion
1 cup shredded mozzarella cheese
1 cup shredded monterey jack cheese
teaspoon crushed red pepper
teaspoon black pepper
3 Tablespoons olive oil
2 Tablespoons soy sauce
2 Tablespoons white vinegar
2 Tablespoons cornstarch

Directions:

In a large ziploc bag or bowl, combine 2 tablespoons of olive oil, soy sauce, vinegar, red and black peppers, and green onion. Then cut chicken into cubes and place in marinade for at least 30 minutes. In a frying pan, heat 1 tablespoon of olive oil and cook chicken with marinade for 8 minutes. While cooking chicken, cook pizza crust for 7- 8 minutes (follow pizza crust directions-no toppings at first). Then remove chicken but leave sauce in frying pan and add cornstarch/water mixture to thicken sauce. Once sauce is thick add chicken and stir. Place chicken mixture over half baked crust then the cheeses and bake for remaining time shown on pizza crust directions (11-12 minutes).
