1 medium onion, sliced
2 TBS butter or margarine
4 cups sliced zucchini( 1/4 inch thick)
1 lb lean ground beef
1 cup ketchup
1/4 cup grated Parmesan cheese
2 tsp lemon juice
1/4 tsp dried thyme leaves, crushed
1/4 tsp dried oregano leaves, crushed
1/4 tsp pepper
1 medium tomato, coarsely chopped

Directions:
Directions:
In a large skillet, saute onion in butter until onion is tender. Add zucchini and saute one minute; remove and set aside. In same skillet, brown ground beef; drain excess fat. Stir in ketchup and next 5 ingredients. Add reserved zucchini and onion; stir in tomato. Simmer, covered, ten minutes, stirring occasionally.
