"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali
This recipe for Homemade Noodles, by Jane Brown, is from The Brown Family Cookbook ,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
Mix first three ingredients and add flour and mix. If too dry add a little milk. Roll out on floured surface and put on a pizza pan. Bake in a 350º oven for 3-4 minutes. Roll up and let cool. Cut with a pizza cutter. 2 batches fit in a 1-quart baggy. Can freeze or cook immediately.
