2 1/2 pounds small red potatoes, cooked & cubed
3/4 cup chopped green onions
3/4 cup chopped celery
3/4 cup sour cream
1/4 cup mayonnaise or salad dressing
2 tbsp. minced parsley
1 tbsp. white wine vinegar or cider vinegar
1 1/2 tsp salt
1/4 tsp. pepper
1/2 cup (2 ounces) crumbled blue cheese

Directions:
Directions:
In a large bowl, toss the potatoes, onions and celery. In a small bowl, combine sour cream, mayonnaise, parsley, vinegar and seasonings. Pour over potato mixture; toss to coat. Sprinkle with blue cheese. Cover and refrigerate for several hours before serving.
