16 lbs potatoes; peeled, cooked & cubed
32 hard boiled eggs, chopped
2 pounds sliced bacon, cooked & crumbled
16 green onions, thinly sliced
5 celery ribs, chopped
4 cups mayonnaise or salad dressing
4 cups (32 oz) sour cream
1 cup prepared horseradish
1/2 cup chopped fresh parsley
2 tbsp. salt or to taste
2 tbsp. pepper or to taste

Toss potatoes, eggs, bacon, celery and onions. Combine remaining ingredients; mix until smooth. Toss with potato mixture. Chill several hours.
