16 oz plain yogurt
1 medium cucumber, peeled, seeded and shredded
pinch salt
4 cloves garlic, crushed
1 T olive oil
5 - 6 mint leaves, finely minced



Directions:
Directions:
Place yogurt in a cheesecloth over a bowl 3 - 4 hours till most of water has drained.
Press excess liquid out of shredded cucumber. In bowl, stir together cucumber and strained yogurt. Mix in garlic, salt, mint. Chill 1 - 2 hours.
