5 to 6 cups rice cooked and cooled
1 cup chopped ham
broccoli
green onions
carrots
beansprouts
snow peas
bok choy
mushroom waterchestnuts
3 eggs
1/4 cup soy sauce
2 tbsp. sugar
1 tbsp oyster sauce

Directions:
Directions:
In wok or very large skillet scramble the 3 eggs and dump out. Add oil and cook 6 cups of any combination of the vegetables you prefer. Cook vegetables in order of those that cook slowest to faster. Also make sure your pieces are about equivilant in size. Dump those vegetables in with the egg when done to desired crispness. Add a little more oil and pour in cold rice and fry until heated through. Add ham then add the 3 sauce ingredients that you have mixed together, stir until coated. Finally put the eggs and vegetables back in until all is heated through.

The longest part of this recipe is chopping the vegetables. Once that is done it is only about 15 minutes from start to finish. You can also do shrimp or chicken instead of ham just make sure to cook those before adding.
