6 cups frozen corn; thawed 3 cups chopped tomatoes 1 cup cubed avocado 2/3 cup chopped sweet red pepper 2/3 cup chopped green pepper 1/2 cup chopped onion Dressing: 1 cup mayonnaise 2 tbsp. red wine vinegar 2 tbsp. Dijon mustard 1 tsp. salt 1/8 tsp. pepper
In large bowl combine all ingredients and toss lightly. In medium bowl combine all ingredients for dressing, mix well and pour over tossed vegetable; mix. Cover and refrigerate until chilled; about 30 minutes.
Can add 1-2 chopped jalapeņo for a little added kick!
