2 medium size zucchini
1 large onion
Salt and pepper
Oregano
Parmesan Cheese to taste
3 tbsp. oil

Directions:
Directions:
Peel zucchini and cut in chunks. Cut onion up in smaller chunks. Place oil in medium size pot and warm on medium heat. Place onion in and saute on medium high heat. Add zucchini oregano and salt and pepper to taste. Cook, covered, until zucchini is cooked but not mushy, stirring occasionally. Add cheese, cut in small chunks. Mix well and cook until cheese softens. Remove from heat and deep covered. Serve as a side vegetable dish;.
