3# roast (beef or pork) cooked until tender and then shredded or sliced thin
1 pkg. hot taco seasoning
1/4 cup finely chopped onion
1 chopped jalepeno pepper
1 sliced red pepper

Flour Tortillas
Shredded Mozzarella Cheese
Finely Chopped onion
Chopped Cilantro
Lemon juice
Green Salsa

Directions:
Directions:
Bake the roast until tender and then shred or slice thin. Add seasoning, onion, jalepeno, red pepper and 1/2 cup water. Mix together and cook on medium heat for about 5-10 minutes.

On a lightly greased griddle, warm flour tortillas on both sides and fill with a spoon full of meat and grated cheese. Sprinkle a few drops of lemon juice over meat, add onions, cilantro and green salsa. Roll up like a burrito.
