1 medium onion, thinly sliced
1/2 medium green pepper, diced
1/2 lb. ground beef
1 cup uncooked rice
1/4 cup butter or vegetable oil
2 cups stewed tomatoes and juice
1 tsp. salt
dash of pepper
1 cup water
dash roasted red peppers

Directions:
Directions:
Brown onion, green pepper, beef and rice in butter. Add remaining ingredients. Heat to boiling. Cover. Simmer for 30 minutes
