7 c. vegetable stock
8 oz. package of dry, green lentils
1 large can of chopped tomatoes
2-3 cloves of garlic, minced
1 large onion, chopped
2 T. butter
2 T. brown sugar
2 T. balsamic vinegar
2 T. fresh, or 1 T. dried rosemary
salt and pepper, to taste

Rinse lentils and bring to boil in stock, then cover and simmer for anywhere from 30 minutes to 2 hours, depending on how mushy you like your lentils.

Separately, saute onions and garlic in butter, then add them, along with drained tomatoes, brown sugar, vinegar, salt, pepper, and rosemary and simmer another 30 minutes to an hour. Adjust seasonings to taste. Freezes well.

This soup has become the perfect comfort food for my children on those snowy days when school is closed. They enjoy playing outside in the snow, then coming inside to homemade lentil soup with bread.
