8 eggs
1 cup sugar
3 cups cold milk; divided
3 cups heavy whipping cream; divided
1 TSR. ground nutmeg

Directions:
Directions:
In heavy sauce pan whisk eggs and sugar together. Gradually add one cup of milk and one cup of cream. Cook and stir over low heat until thermometer reads 160, about 25 minutes.
Pour into large bowl; stir in nutmeg and remaining milk and cream, put bowl into ice water bath and stir until mixture is cool; Cover and refrigerate for at least 3 hours.
Makes 2 quarts
