1 cup dry navy beans
1 1/2 pounds pork hocks or ham bone
1 1/2 cup sliced celery
1 medium onion chopped
3/4 dried thyme
1/4 tsp. pepper
1 bay leaf

Directions:
Directions:
Rinse beans; Add beans and 4 cups water to large sauce pan. Bring to boil; Reduce heat. Simmer for 2 minutes. Remove from heat and let stand for 1 hour. Drain and Rinse. In soup pan combine beans, pork hocks or ham bone, celery onion, thyme, pepper, bay leaf and 4 cups FRESH water. Bring to boil; reduce heat and let simmer for about 1-1 1/2 hours. Beans will be tender when done. Remove meat from pan. and Remove bay leaf. Discard bay leaf and remove meat from bone. Mash beans slightly in pan and return meat to soup.heat through, and serve.
Makes 8 cups.
