1 c. sugar
1/3 c. orange juice
1 tsp. cream of tartar
2 1/4 c. whole pecans or pecan halves
1/2 tsp. grated orange rind

Directions:
Directions:
On cookie sheet toast pecans until golden and fragrant. In a large, heavy saucepan combine sugar, orange juice and cream of tartar. Cook over low heat, stirring constantly, until mixture boils (this step can take up to 10 minutes or so). Once boiling, cover saucepan with lid and let mixture cook for 2 minutes. Uncover saucepan, attach candy thermometer to side of pan, and let cook (without stirring) until mixture reaches 236 degrees (soft ball stage). Remove pan from heat and beat with a spoon until mixture begins to thicken. Stir in pecans and orange rind. While still hot, quickly drop coated pecans onto wax paper. Break up any large pieces that have stuck together. Cool completely. Store in a covered container or package in cellophane bags for gift giving.
