1 16 oz package frozen California Blend veggies
1 (4 oz) can chopped pimento, drained; divided
1 (10 oz) cream of mushroom soup
1/3 cup sour cream
1/4 tsp. pepper
1 (3 oz) can French fried onions; divided
1 cup shredded Swiss cheese

Directions:
Directions:
Preheat oven 350. Grease a large casserole dish. Combine vegetables, half the pimentos, soup, sour cream, pepper, half of the cheese, and half of the fried onions in a bowl; mix.
Spoon mixture into prepared casserole. bake for 20 mins. Sprinkle remaining fried onions, shredded cheese and pimento. Bake 5 mins longer, remove from oven and let stand for 5 mins. before serving.
Serves 6
