1 package softened refrigerated pie crust
1 tbsp. oil
1 lb boneless beef, or left over roast, cubed
1 onion chopped (1/4 cup)
1 1/2 cups prepared beef gravy
1 tbsp. cornstarch
2 tsp. sugar
1/8 tsp. pepper
2 frozen mixed vegetable
2 cups frozen hashbrowns

Directions:
Directions:
Prepare pie crust as directed on package for 2 crust pie in 9 inch glass pie plate. Heat oil in large skillet over med-high until hot. Add beef and onion; cook and stir till beef is browned. Drain. In small bowl combine gravy, cornstarch, sugar, and pepper; mix well. Add to beef in skillet. Stir in vegetable and potatoes. Cook about 5-10 mins. until vegetable are thawed, stir occasionally.
Spoon mixture into crust lined pan, top with second crust, seal edges and flute. Cut slits in several places in top crust.
BAKE @ 400 for 35-45 mins, until golden brown. Let stand for 10 mins before serving.
