2c. ground ginger snap cookies
2 tabs. sugar
1/3c. butter

Filling:
8 oz. cream cheese softened
1/4c. sugar
2 tbsp. lemon juice
1/2c. whipped cream
1 tbsp. water
1/4c. fruit (raspberries, blueberries, strawberries, cherries, blackberries, boysenberries)

1. Crust: in a medium bowl, combine cookies, sugar with a blender and add butter until clumped.
2. Form and press into bottom and sides of a baking pan. Bake at 350 for 8 minutes until light brown. Let cool.
3. Filling: Combine cream cheese, sugar, lemon juice, in a mixer then add whipped cream and beat on high until light and fluffy.
4. Spread on the shell and chill several hours.
5. Arrange fruit on top and serve immediately.
Chill until served.

*light version replace filling with 1 (8oz) can of lemon yogurt (fat-free)
