8 oz. bacon diced
1/2c fine chopped onions
1 tsp minced garlic
1/4 tsp black pepper
a pinch of salt
1 large orange, segmented
1 1/2 tsp. Creole mustard
1/4c. red wine vinegar
2 tbsp. sugar
1/2c. dried cherries
1/4c vegetable oil
8c. fresh spinach, cut into bit size pieces
4 oz. goat cheese crumbled

1. In a large skillet, cook bacon then add in onions and garlic, salt/pepper and cook 1-2mins.
2. Add in mustard, sugar, cherries, and let cool about 1 min.
3. In a large bowl, toss spinach with warm dressing and divide into four salad bowls. Sprinkle with cheese and orange wedges. Serve immediately.
