1 c. Quinoa (dry)
2 c. Water

1 c. tomatoes, diced
1 small cucumber diced and seeded
1/4 c. flat leaf parsley, chopped
2 T. fresh mint, chopped
4 green onions, sliced including green part
1 garlic clove, minced
Lemon zest from one lemon
1/4 c. Lemon juice
2 T. Extra virgin olive oil
Salt and pepper to taste

Rinse quinoa well in cold running water. As you would cook rice, combine quinoa, water, and a pinch of salt in a pan on the stove top. Cover and cook for 10 + minutes until done. Cool.

When quinoa is cool, in a salad bowl, combine the rest of the ingredients. Adjust lemon juice, olive oil, salt and pepper to taste. Refrigerate 15 minutes to let flavors combine.
