1 large chopped onion
1/4 c. butter
3 medium sweet potatoes, chopped
3 medium zucchini, chopped
1 bunch broccoli, chopped
2 qt. chicken or vegetable broth
2 medium potatoes, shredded
1 tsp. celery seeds
1 tsp. cumin
2 tsp. salt
1 tsp. pepper
2 c. light cream

Directions:
Directions:
Sauté onions until transparent; add sweet potatoes, zucchini and broccoli, sauté 5 minutes. Stir in broth and simmer for a few minutes. Add potatoes and seasonings, cook 15 minutes or more until tender. Stir in cream, heat and serve.

Instead of cream, you can substitute a mixture of 1 cup sour cream and one cup cottage cheese, blending until smooth.
