2 tablespoons vegetable oil
1 large onion, finely diced
1 red pepper, julienne
1 yellow pepper, julienne
2 ribs celery diced
1 teaspoon cayenne pepper
˝ teaspoon oregano
1 teaspoon salt
1 tablespoon flour
1 cup hot water
1 pound orzo pasta, cooked per instructions
1 pound shrimp or crawfish peeled
˝ cup green onion, chopped

Directions:
Directions:
In a large skillet ,sauté onion, peppers, and celery in vegetable oil until tender, 5 -6 Minutes. Add cayenne, oregano, and salt, continue to sauté 2 minutes. Add flour and onion, sauté until flour turns light brown, 2 minutes. Add hot water, bring to a boil, reduce heat, simmer 10 minutes. As sauce simmers, cook pasta in time to finish with sauce. Add shrimp or craw fish, continue to simmer until shrimp is pink, 5 minutes. Add green onions, cook 1 minute. Spoon sauce over pasta and serve.
