7 Egg Plant, quartered, seeded and skinned
1˝ Quarts Peeled Shrimp
Italian Bread Crumbs
1 Large Onion, Chopped
2-3 Medium Cloves Garlic, Chopped
1 Stick Margarine
6 Peppers, halved (may be quartered)

Directions:
Directions:
Sauté onion and garlic in butter until light brown and tender. Add shrimp, continue to sauté. Boil egg plant approximately 30 minutes.Parboil peppers. Add egg plant to sauté, cook down 30 minutes. Add bread crumbs to thicken. Stuff peppers and serve.
