1/4 cup olive oil
2 Tbls malt vinegar
1/8 tsp almond extract
3 medium apples, peeled or unpeeled sliced
2 Tbls sliced green onions
2 Tbls sugar
1/2 tsp salt
6 cups lettuce, torn into bite size pieces
3 cups celery, chopped
1/3 cup slivered almonds, toasted

Directions:

Using screw top jar, combine oil, vinegar, extract, sugar and salt. Shake until sugar is dissolved. Chill in refrigerator several hours. Combine vegetables with apples. Pour dressing over top and sprinkle with almonds.
