1 large sweet onion
2 Tbsp olive oil
6-oz bag baby spinach
8 large eggs
1/4 water
1/4 cup Parmesan Cheese
salt and pepper to taste

Directions:
Directions:
Preheat over to 425, Quarter sweet onion and sliced thinly. Cool onion in a large ovenproof skillet coated with 2 Tbsp. olive oil over medium heat until soft and golden, about 10 minutes. Stir in a 6-0z. baby spinach and cook just until wilted, remove from heat. In a bowl whisk 8 large eggs, 1/4 cup water, 1/4 grated Parmesan Cheese, salt and pepper to taste. Pour egg mixture into skillet and return to medium heat. Cool until egg begins to set around the edges, then transfer to the oven and bake until frittata is golden, 8 more minutes. Slice into wedges and serve with whole wheat toast.
