1 beef tenderloin (5-6 Pounds)
1 cup soy sauce
1 cup port wine
cup olive oil
1 teaspoon pepper
1 teaspoon dried whole thyme
teaspoon hot sauce
4 cloves garlic, minced
1 bay leaf
watercress for garnish

Directions:
Directions:
Mix Ingredients, simmer on low heat 10 -15 minutes. Place tenderloin in a dish. Pour wine mix over the tenderloin. Chill 8 hours, turning the loin occasionally. Draw the marinade, bake @ 425F until center of loin is: 145 F medium rare or 160 F medium as measured with a meat thermometer or, about 45 - 60 minutes.
