Eggs Benedict Recipe

2 tablespoons Butter
4 cloves Garlic
onion - Chopped
cup Mushrooms - Chopped
Bay Leaf
1 teaspoon Tomato Paste
cup Flour
cup red wine
2 cups beef stock

Other Ingredients:
Canadian Bacon
Paprika (Optional)
English Muffins
Eggs, Poached

Chop all ingredients fine, add beef stock, wine, butter, tomato paste, garlic, bay leaf, salt, pepper.
Brown whole Canadian Bacon. Poach Eggs (A silicone muffin pan works well).
In Order:
Top English Muffin with Sauce, Canadian Bacon, Pouched Egg and Sauce. Sprinkle with Paprika.
Garnish with Orange Slice
