6 med red potatoes washed and cut into chunks
1 med onion cut in wedges
1/2 each of red & yellow pepper cut into chunks
salt & pepper to taste
aprox. 1/2 c. olive oil

In a 9 X13 casserole dish add potatoes, onions, and peppers salt & pepper to taste and dribble olive oil over the whole dish. cover. bake at 350 for 1 hr.

Very good side dish to go with any type of meat. Also good for those summer BBQ's and as an option you can put in an alumimum pan and cover with alumimum foil.
