Meatballs:

Recipe for basic cocktail meatballs, found in book

Sauce:

1 lb of mushrooms sliced
1 small finely diced onion
5 tbsp of salted butter
2 tbsp of flour
1 cup of milk
2 cups of beef stock
1 packet of dry beef soup mix or 2 beef bouillon cubes
1 tsp of cracked pepper
2 tsp of thyme
2 tsp of dill
2 tsp of rosemary crushed fine
3 tsp of parsley

Directions:
Directions:
Make basic cocktail meatball recipe found in the meat section of the cookbook. Roll into small, bite sized balls. Brown in oven on a cookie sheet at 325║ for 10 minutes. Remove from sheet and place on paper towels to remove excess fat. Place 1 tbsp of butter in a deep sautÚ pan until melted. Add onions, mushrooms and sautÚ on medium high heat. Remove mushrooms and onions from pan and set aside. In same pan, add remaining butter and melt until bubbly but not brown. Add flour and whisk into a roux or paste. Add milk and whisk till thick and creamy. Add beef stock and simmer until glossy and creamy. Add onions, mushrooms, and liquid into sauce as well as remaining spices and simmer. If too thick, add more stock. You can also add 1/4 cup of sour cream for a Stroganoff style. Add meatballs and simmer for 1/2 hour. App serves 20. Dinner 6.

This can be made ahead and taken to a party in a crock pot or chafer and holds up well. You can also make this into a meal by serving over buttered, wide style egg noodles. If you make as a meal, make the meatballs larger than cocktail size.
