3 lbs. 30 to 34 count fresh shrimp, uncooked, pealed and deveined, tails on

Marinade:

3/4 cup of extra virgin olive oil
juice of one lemon
juice of one lime
3 tbsp Tabasco, Red Devil Sauce, or favorite hot sauce
4 tbsp Worcestershire sauce
3 tbsp chopped garlic
3 tbsp basil
3 tbsp oregano
1 tsp salt
2 tsp of cracked pepper
1 tsp of red pepper flakes

Boil shrimp until pink in hot boiling salted water, also add the rinds from the lemons that have been juiced for added zest and freshness. The cooking process only takes a couple of minutes. Drain shrimp well in colander. Place shrimp in sealed marinade pan or other covered container you can flip. DO NOT USE plastic bag as tails can poke through. Whisk all ingredients into a marinade and pour over. Place in refrigerator and turn over every 1/2 hour or so for 3 hours and then let marinade over night. Flip again in the morning. Drain off excess marinade and place shrimp on a platter with lettuce leaves underneath. Serves 12

This is a great appetizer. Do not use frozen precooked shrimp as it will make marinade watery. Can be served with picks or place 3 to 4 on a bamboo skewer. Great with Margaritas or Mexican beer with lemon or lime! It is also just spicy enough to be interesting and not too hot. Serves 20 as an appetizer.
