1/2 medium onion
2 Roma tomatoes, minced
3 garlic cloves, crushed
2 jalapenos, sliced
2 c brown or white rice
4 c water
2 chicken bouillon cubes
1/2 bunch cilantro, chopped
smidge (1/2 tsp) cumin

Directions:
Directions:
Heat olive oil in electric skillet. Saute onions, garlic, tomatoes, peppers. Add rice to fry a little. Add water, bring to boil. Add bouillon. Add cilantro. When boiling, cover and turn down heat, simmer. Add more liquid if necessary. (Brown rice takes longer to cook, than white- maybe 45 min)
