1/3 C. packed brown sugar
1/3 C. soy sauce
2 tsp. lime zest
1/4 C. lime juice
3 garlic cloves, minced
1 1/2 lbs. boneless, skinless chicken breast cut into 1 inch pieces
Peanut Dipping Sauce:
1/3 C. Skippy creamy peanut butter
1 Tbsp. snipped cilantro

Directions:
Directions:
In a bowl combine brown sugar, soy sauce, lime zest and lime juice. Mix in garlic. Reserve 1/3 C. of this mixture for peanut sauce and set aside.
Add chicken to the remaining sauce and marinate, covered for 30 minutes in the refrigerator.
Preheat oven 400. Bake chicken in a 9-inch square pan for 20 minutes.

Peanut dipping sauce:
Add peanut butter and cilantro to the reserved1/3 C. sauce. Whisk until smooth. Serve with chicken.
