Boned, skinless chicken breasts
Fresh mushrooms
Muenster cheese
Flour
Margarine
White cooking wine (I use Holland House)

Directions:
Quantities depend on how many you are feeding. Usually 1 1/2 chicken breasts per person and 6-8 slices of muenster cheese per Pyrex dish. Clean, trim and flatten chicken breasts to your preference. Dredge in flour until lightly coated. Lightly brown both sides of chicken breasts in margarine and place in casserole dish. Saute mushrooms in margarine and then drain on a paper towel. Place at least one slice of cheese on each breast (you determine how much cheese you want to use). Spread mushrooms over cheese. Pour cooking wine up to level of chicken--you do not want it to cover the chicken. Bake in 350 oven for 50 minutes or until cheese has melted and is slightly browned and sauce is bubbly.

This casserole is great to take to ailing friends or new mothers. The sauce is delicious over rice. It is also great as a leftover.
