8 med russet potatoes, sliced thin
1 stalk green onions, chopped
3 tbsp butter
1 tbsp garlic powder
3 tbsp flour
1/2 tsp salt
2 cups milk
2 cups extra sharp cheddar cheese. shredded
2 tbsp extra-virgin olive oil

Directions:
Directions:
Preheat oven to 400. Saute' onions and garlic powder in extra virgin olive oil. Par-boil potatoes. Layer 1/2 potatoes in buttered casserole dish. Top with onion mixture. Add remaining ingredients and season with salt and pepper. In a medium saucepan, melt butter over medium heat. Mix in flour and salt, stirring constantly with a whisk, for 1 min. Stir in milk. Cook until thickened. Stir in cheese and cook until melted. Pour cheese over potatoes and cover with foil. Bake 1 1/2 hours. Remove foil last 30 mins to brown.
