1 1/2 cups oil
1 1/2 cups sugar
1/2 cup brown sugar
3 eggs
3 cups flour
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking soda
1/2tsp salt
3 1/2 cups apples, peeled and diced
1 cup chopped walnuts
2 tsp vanilla

Carmel Icing
1/2 cup brown sugar
1/3 cup light cream
1/4 cup butter
dash of salt
1 cup confectioners sugar
1/2 cup chopped walnuts

Directions:
Directions:
Preheat oven to 350 Grease and flour a 10" tube pan. Combine oil and sugars. Add eggs and beat. Combine dry ingredients and add to batter, stirring well. Fold in apples, walnuts, and vanilla. Pour into pan and bake for 1 1/2 hours. Cool 10 mins.

Carmel Icing
In double boiler with simmering water, heat brown sugar, cream, butter, and salt until sugar is dissolved. Cool to room temperature. Beat in confectioners sugar until smooth. Drizzle over cake. Sprinkle with chopped nuts.
