3 eggs
1/2 cup vegetable oil
1/2 cup applesauce
2 cups sugar
2 cups zucchini, grated
2 tsp vanilla
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
3 cups flour, sifted
3 tsp cinnamon
1/2 cup chopped nuts, optional

Preheat oven to 325. Grease and flour a 10" bundt pan. Beat eggs until frothy. Mix in oil, applesauce, and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, and salt. Stir into egg mixture. Bake for 60-70 mins, or until done.
