1 Cup Butter
1 Cup Sugar, brown
1 Cup Sugar, white
3 Cups Oatmeal, quick cooking
1 1/2 Cups Flour
1 t Baking Soda
1 t Salt
2 Eggs
1 t Vanilla
1 t Coconut flavoring, optional

Directions:
Directions:
Cream butter, add sugars and cream well. Add beaten eggs. Sift flout, soda and salt together, add oatmeal and add to the butter. Add vanilla and coconut.
Shape into log rolls and freeze overnight.
Cut into 1/2" slices and bake at 350 10-12 minutes.

The frozen dough is really good so make a batch and a half right off. GMa always made sure she had some dough just for me!!
