Chicken:

4 boneless, skinless chicken breast
1/4 cup sour cream
1/2 cup seasoned bread crumb
2 tbsp. butter
2 tbsp. olive oil

Tarragon Mustard Sauce:

2 tbsp. butter
2 tbsp. flour
1 cup milk
2 tbsp. dry white wine or water
1 tsp. dried tarragon leaves
1/8 tsp. salt
2 tbsp. Dijon-style mustard

Directions:
Directions:
Pound chicken breasts.
Spread with sour cream on both sides. Coat with bread crumbs.

In large skillet, heat 1/2 of the butter and oil. Saute' chicken breasts on both sides until golden brown, adding more butter and oil as needed.

Place in small foil-lined baking dish. Cover with foil.
Bake at 325 for 35 minutes or until tender.

Tarragon Sauce:
In small saucepan, melt butter. Stir in flour; cook for 1 minute.
Stir in milk, wine, tarragon and salt. Cook, stirring constantly, until sauce has come to a full boil.

Remove from heat. Stir in mustard.

Serve sauce warm over chicken breasts.
