4 chicken breast fillets
1 12-16 oz pkg chopped spinach, thawed and drained
4-6 ozs Feta cheese, crumbled
4 cloves garlic, minced
1 med onion, diced
1 lg can petite diced tomatoes
2 tbsp garlic powder w/California seasonings
2 tbsp olive oil

Directions:
Directions:
Saute' garlic and onions in olive oil until tender. Add tomatoes and water. Let simmer for 10 mins. Remove from heat. In a separate pan, heat 2 tbsp olive oil and add spinach. Cook until warm. Add feta cheese and mix until spinach "sticks" to cheese. Let cool. Prepare chicken breast to stuff by slicing a pocket in each breast lengthwise. Do not cut through to the other side. Stuff equal amounts of spinach mixture into each breast. In a 9x13 baking dish, pour 1/2 of the tomato mixture into bottom of pan. Add chicken breasts and pour remaining tomatoes over chicken. Add 1/4 cup water and dash olive oil over top of chicken. Bake at 350 for 30mins covered. Uncovered, and bake an additional 30 mins. Spoon sauce over chicken while cooking.
