2 pouches of Pink Salmon
1/2 cup diced green peppers
1/2 cup diced green onions
1/2 cup mayonnaise
2 tbsp lemon juice
1/2 tbsp Old Bay seasoning
2 eggs, beaten
1 pkg Zesta saltines, crushed
3 tbsp butter + 3 tbsp olive oil for frying

Directions:
Directions:
In med bowl, flake salmon. Add peppers, onions, mayonnaise, lemon juice, and Old Bay. Mix well. Add crushed saltines and mix with fork or by hand. Shape into patties and fry in butter and oil mixture until brown and crispy. Sprinkle patties with more Old Bay, if desired.
