2 chicken breasts grilled and sliced (May use prepared chicken strips or rotisserie chicken).
6 ounces of fresh salsa or prepared salsa (salsa recipe to follow
1 chopped jalapeńo pepper.
8 large flour tortillas
2 cups, four mix Mexican cheese, or Pepper Jack cheese
Sour cream for garnish
Canola oil

Directions:
Directions:
1.Heat oil over medium heat. 2.Sprinkle ¼ cup of cheese over tortilla. 3. Add chicken strips.. 4. Top with salsa 5.Top with another ¼ cup of cheese and tortilla. 6.Press firmly with spatula to enhance melting of cheese. 7. Cook for 2-4 minutes.
8. Carefully flip quesadilla and cook other side for 2-4 minutes. 9. Tortillas should be golden brown with cheese melted. 10. Repeat process with other quesadillas. 11.Cut into wedges.
