4 chicken breast halves, boned and skinned
Salt and pepper
1 cup flour
¼ cup white wine
1 teaspoon garlic, minced, optional
½ cup chicken broth, low sodium
2 tablespoons fresh lemon juice
1-2 tablespoons capers, drained
2 tablespoons butter
Fresh lemon slices
Fresh parsley, garnish

Directions:

Pound chicken between plastic wrap until thin. (May cut breasts horizontally to make thin filets). Mix flour, salt and pepper; dredge chicken in flour mixture. Sauté in oil on both sides until done. Transfer chicken to platter and pour off oil and fat from pan. Deglaze pan with wine; add garlic. Cook until lightly brown and liquid is almost gone, about 2 minutes. Add broth, lemon juice and capers. Return chicken to pan and cook on each side about 2 to 3 minutes. Transfer chicken to plate or platter. Melt butter; add lemon slices. Pour over chicken and garnish with fresh parsley.
