3 cans (15 oz. each) black beans, rinsed and drained
2 chopped tomatoes
2 avocados, diced
1/2 C sliced green onions
2 Tbsp. fresh lime juice
1 Tbsp. vegetable oil
1/2 tsp. cumin
1/2 tsp. salt
1/4 tsp. freshly ground pepper.

Dressing

2 C lightly packed fresh cilantro leaves or 1 C fresh parsley plus 2 Tbsp. dried cilantro.
1/2 C sour cream
1/2 C mayonnaise
2 Tbsp. fresh lime juice
1/4 tsp. minced garlic
1/4 tsp. grated lime peel
1/4 tsp. salt, 1/8 tsp. freshly ground pepper.

Directions:
Directions:
Combine all salad ingredients in medium bowl and toss to coat well.

Dressing

Combine cilantro, sour cream, mayonnaise, lime juice and garlic in blender; blend until smooth. Stir in lime peel, salt and pepper. Refrigerate until ready to use.
