2 c. all purpose flour
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. sugar
1 egg well beaten
2 T. butter, melted
2 T. hot water
1/2 c. orange juice
1/4 c. grated orange rind
1 c. fresh or dried cranberries
1/2 c. nuts, chopped

Directions:
Directions:
Preheat oven to 325 and grease a 9 x 5 inch loaf pan.

Combine the flour, salt, baking powder and baking soda. Add sugar, egg, butter, hot water, orange juice and grated orange rind. Stir until moistened. Fold in the berries and nuts. Spoon into the pan and bake 50 minutes or 35 minutes for mini loaves. Cool and wrap and refrigerate or freeze.

This bread batter makes a dense bread that is great toasted and served with butter. I use dried cranberries when fresh aren't available. I threw a few bags in the freezer so we can have bread all year around.
