3/4 Cup rice covered with cold water - Bring to a boil and cook until done - drain and rinse with cold water.

Mix:
3 egg yolks (Save the egg whites for the meringue)
3 Cups Milk
3/4 Cup Sugar
3 Heaping Tablespoons of cornstarch. Cook this custard mixture until custard is thickened. (I use the microwave and use a wire whisk to mix). When thick, add rinsed and drained rice, and 1 teaspoon vanilla mix custard and pour in a casserole dish.

Meringue - 3 egg whites beaten, 6 Tablespoons Sugar and 1/4 teaspoon cream of tarter. Beat until stiff and glossy.

Put meringue on top of custard and bake in a 350 degree oven for about 15 minutes.
